Would you like a new dressing recipe that will send your taste-buds into euphoric bliss?
I just got home from walking to my local Kin’s Market where they sell an awesome variety of fresh produce. After lugging two heavy bags up the steep hill to my house, (oh why did those honey pomelos have to be on sale?) and unloading everything onto the table, I got an inspiration to create a dressing out of some of the ingredients I’d bought.
The fresh raspberries, lime, ginger and avocados just called out to be blended and poured on a salad! I made the dressing, tasted it, and then couldn’t decide if it should be a dressing or a smoothie! That was some yummy shtuff!
Well, I had a mixed green salad with sliced cucumber and shredded carrot already made up in the fridge. (I like to make up a bunch of salads in small containers ready to go, otherwise those big tubs of salad greens I buy tend to go slimy and become compost food!) I added some sesame tofu chunks I had left over and some unblended raspberries, drizzled dressing over it, then tossed slivered almonds on the top.
I took this picture to show you all, and then took a bite. The dressing was so good that I slathered a bunch more on top and devoured the salad! It was so refreshing and satisfying!
Today is cool but sunny, not raining for a change as it usually does in the fall, so I felt like I’d just had a last bite of summer with those lovely berries!
Here’s the dressing recipe for you:
Creamy Raspberry Ginger Dressing
½ medium-sized avocado, cut in chunks
1 cup fresh raspberries
juice of 1 lime
1 inch chunk of ginger, peeled and chopped
2 Tbsp agave syrup
¼ tsp salt – I use Pink Himalayan
bit of water
Throw everything in the blender and blend adding a bit of water at a time until it’s your desired thickness. Create your own salad and douse that sucker with this awesome sauce! Or skip the salt and just drink that baby! I hope you love it like I did.
Just For Laughs: Okay, I was finished typing this blog and talking to Mana, my youngest about what I have to do to some pictures on Adobe Photo-Shop, and they thought I said A Doobie Fetish Shop! Wow! I can just imagine the photos they would have there!!!
